Morning power with creamy millet

Recently I have posted a photo of my breakfast on Instagram. One of my friends asked me for a recipe. Because it is very healthy and delicious option - I thought I will share this recipe with everyone. If you did New Years resolutions list and there is one point called 'eating better' - this definitely should be often morning choice.



Why millet? Because it's one of the oldest and healthiest groats, it has a nice flavour, it's going with everything, it has a lot of easily digestible protein, B vitamins (B1 (thiamine), B2 (riboflavin) and B6 (pyridoxine)), iron and copper. It's also easy to digest and does not cause allergy because they do not contain gluten. On the top of all that, it has antiviral properties, reduces inflammation of mucous membranes (dry excess secretions), so it is a good home remedy for colds. Those little seeds are really powerful and just amazing!

You will need:
1. 1/3 cup of millet
2. Milk (I'm using coconut or almond milk) - 1,5 cup
3. Around 1 litre of boiling water
4. Nuts, seeds, berries of your choice, almond or/and coconut flakes
5. You can add also a banana or any other toppings
6. Pan, pot, strainer, spoon




How to do it:
1. Put millet on the strainer and rinse with boiling water


2. Pour milk into the pot and put on medium fire
3. When milk will be hot (not boiling), drop millet into it, lower the heat and stir occasionally
4. Put a pan on medium fire - drop bigger nuts first and roast them, next you can add any flakes (they need less time on hot pan)
5. When millet will absorb milk, turn off the fire
6. Plate millet into your favourite bowl, top with seeds, berries, fruits


The secret here is in keeping low heat under the pot and let millet slowly absorb whole milk!
